What is the name of the panel applet that displays which applications are open? I can’t find anything that looks like that in the add applet window. Thanks in advance!

It’s called Dock.
There might be multiple options, but that’s the one I use.
I think you’re looking for the “window list” object. 
It can be added by clicking on your panel and selecting “add to panel”.
