In the /home/andy/datetime-format/ directory, I found a file with this it it.

Datetime Format

A Gnome extension which allows users to modify the datetime displayed in the following places:

  • Status bar
  • Date menu when status bar is clicked
    • Day name
    • Date

I do not understand what these 4 items are?

Are they for use in Caja?

And is gnome-tweak-tool the same as mate-tweak?

It looks like this is for https://extensions.gnome.org/extension/1173/datetime-format/, which is a GNOME Shell extension, so completely unrelated to MATE. No, gnome-tweak-tool, aka Tweaks, is extra settings for GNOME 3.
