Windows 7 is installed on my hard drive and I just purchased a second hard drive which will be dedicated to Linux only. I disconnected the drive with Win7 from the motherboard, then I connected the new hard drive and installed Ubuntu Mate 17.04 on it.
Right now, only the drive with Ubuntu Mate 17.04 is connected to my PC and of course, on booting I automatically boot into Ubuntu Mate. How do I proceed to install Grub boot-loader so Win7 can appear as an option on the boot-loader? I guess that I should first reconnect the Win7 drive but then what to do next?
One suggestion that I have read somewhere is to first reconnect the drive with Win7 and once I boot into Ubuntu Mate, to run “sudo update-grub”. Then after rebooting Win7 should appear as an option in the Grub menu.

You're save to try that. It uses os-prober to find other os's. It is installed by default.
I used to do simply use the motherboard bootmenu (for me it was f8 right after start). So maybe that is an option for you?

Yep, in bios make sure first boot option is the linux HD, then just do the grub update once booted into Ubuntu

I have a laptop with two separate HD inside. Would this method allow me to maintain two different versions of Linux, one on each disk?
(at this moment I only use the second disk as a backup, but the idea of having twice the system in case of crash or whatsnot seduces me)

If you want to have a backup system if one disk brakes down make sure they both have a boot-loader installed. But I think a boot-loader like grub2 will be installed by default on the disk where the os is.
