I think years ago all Ubuntu flavours had the option on install to encrypt one's home folder. It disappeared some time ago. Do you think it will ever come back?

This feature was removed because it was causing troubles in some cases.
You can encrypt all the disk (more safe - durng OS installation)
or, go trough this how-to (after installation) :
