That icon is part of your current running theme which can be changed but not so easy to do. You would have to go to /usr/share/icons (or /themes), locate the theme your running, locate the right icon and change it.
An easy built-in way is just to change the icon pack your running with the theme changer. Its located in your menu under "Look&Feel".

please open dconf-editor (see applications in main menu or press ALT+F2 and type in dconf-editor)
Go to
org > mate > panel > menubar
You will find the point icon-name. Change the value to ubuntu-mate (for example) or an other icon from your icon theme.
