Would anyone happen to know if it is possible to modify the suspend option in the mate start menu to perform the following command (with sudo privileges) “systemctl hybrid-sleep”? 
Can you add a pick of wath you wan’t to change ?

Not possible . The thing that can be done is to create a custom dialogue and bind it to a key .
