Is there a way to get these windows so they are longer?
They are part of the desktop buttons on the bottom of my screen.
I think you are asking about modifying the panel? I have had mixed results with that but I would start here and check the layout you are using.
/usr/share/mate-panel/layouts

Why not just create a new panel? Or sub-panel if that's more to your needs.

To clarify, to you mean
- larger "font size", or
- instead of 150px by 30px, you want 150px by 80px?
The latter is not possible, to my knowledge.

Unfortunately it is Door #2.
I have lots of space on my panel, so it would be nice to make those "windows" wider so they show more of a directory name.
