I just removed a snap package of Okular because of the read and write restrictions; after removal, I installed from the MATE repositories with APT, as well as the ODT & extra file format backends. I tested functionality and it works, so I was about to change my default PDF viewer to Okular but I noticed twenty-five entries of Okular in the Open With dialog.
This doesn’t appear to be normal; at least it shouldn’t be. I think there should only be one entry for Okular. Could the backends be creating the extra listings in the Open With dialog?

I realise this is very late reply, but I have the same problem (except I went straight for the apt version, not the snap), and your post came up in a search. Did you ever solve this?
