This may be a menu/panel question in general and not necessarily specific to the Mutiny layout (that just happens to be what I use) but I notice when trying out other themes that the Ubuntu Mate logo image that represents the menu button often changes to something else. Most of the time it becomes the Gnome foot. I love having the Ubuntu Mate logo there though. Is there an easy way to set it back? Is there an image file I can just replace in the theme directory or something?

Mutiny layout is using Brisk Menu by default, which displays start-here icon from your theme. So, replace this icon. You may want to check this thread, where similar question was discussed.
