Connecting both WiFi and Ethernet on 22.04 vs. 16.04?

I've been playing with Pixelblaze and other ESP32 systems that by default create a WiFi access point. With 16.04 while connected to wired Ethernet I simply plug in a WiFi Dongle and connect to the ESP32 AP and then open a browser page to 4.3.2.1 (or whatever, depends on the exact firmware) and everything works great, I can still browse external ESP32 tutorials, references, etc.

But on 22.04 If I plug in the dongle and connect to the ESP32 AP either it doesn't connect or if it does connect it breaks my wired Ethernet connection as if 4.3.2.1 has become the default route.

How can I make 22.04 behave like 16.04 did?
