I installed GHEX to view a text file so I could see the ASCII codes. It worked great, but now every file that has a .txt extension is being opened by GHEX.
How do I reset the file association so that GHEX doesn’t open those files?

Right click on a text file. Properties. Open with. Set file associations here.

I tried that first. Just did it again and noticed I did not click on the radio button to actually select Pluma, just highlighted it.

Fred, next time you open a new file type with Pluma, (as in Open with some other application) please notice that there is a (default) check mark in a box that specifies “Remember this application for " blank-blank” documents files". Remember to un-check that thing to avoid screwing up a familiar file association. It’ll remain (the new file type) as an option for later use if you so desire.
