How can I take a screenshot in UM 16.04 of a context menu?
Use the screenshot application.
(Applications -> Accessories -> Take Screenshot)
Set a delay like 10 seconds, select "Grab the current window", then launch it, navigate to your window and deploy the context menu.

Yes, but like this it will grab the context menu including the entire screen. Is there any way to only take a screenshot of the context menu? For some reason Grab the current window only works with application windows but not with context menus. Am I doing something wrong?
I don’t think there’s a way to do that directly.
I could be wrong so if anyone knows a way, please do say so.
I’d take a screenshot of the whole screen, then crop it in Gimp or equivalent.
I may have misunderstood ... but here's my take.
Grab the current window
set a 6 sec delay
include the pointer
right click on an object
Set your print screen to a delay of, say, 10 seconds. During that 10 seconds, open you context menu and wait. Once the screenshot has been taken, open it in Gimp and crop it to just show the context menu, then export it back out Gimp in your chosen format.
Install Shutter from the Software Center, it allows snapshooting context menus

I can confirm Joss’s advice. Just installed shutter. Outstanding program.

I’ve been using shutter for two and a half years. A really good programm. Have a good look around, including the “Edit” feature. 
I just installed Shutter and I can see that it has more functions than the standard screenshot application that comes with UM 16.04. I’ve looked in Edit > Preferences but didn’t find any option to only take a screenshot of a context menu without having the entire desktop included. The reason I am looking for this is to avoid the extra step of having to crop the image. There must be a more elegant way to do this.
Yes you can take one of only a menu. See below (this screenshot is not taken with Shutter cos it can't take a screenshot of itself, but with Mate's pre-shipped screen-shot program). You choose file/new/menu and then, in the next few seconds, open any menu and it will screenshot only that menu.
