How do I remove Evolution mail from the plank? I already unchecked keep in dock.
I guess like any other app on plank: "Drag and drop" to remove.
Drag the icon away from plank and drop it anywhere
(In plank config you need to have "lock icons" disabled)

I had to use sudo apt-get purge evolution
