Icon Theme Change

Running 20.04. Apologies if this has come up before but I cannot find out how to, if you can, change one's icon theme. It seems to me there was a 'customise' button on the Appearance/Theme page but it is not there any more. I have read about using dconf-editor (which I have) but not details instructions on how to make the actual change. I have used lubuntu, xubuntu and gnome where it is easy to change the icon theme but I prefer ubuntu mate. So far, compared to other versions of ubuntu, I am surprised how difficult/not obvious it is to change the icon theme. Can you change, like other versions, both the icon theme and main theme independently?
