Is there a faster way of deleting default programs that Ubuntu_Mate uses?

(Nothing personal to the writers of Ubuntu-Mate.)

For instance, I just removed RhythemBox as I use VLC.

Another example is Geany.

Geany is much more useful than any other text editor I have seen.

I don’t know the straight answer to your question, but can you not do a minimum install, so that there are fewer unwanted programs to uninstall?
