if you click on the red square, it will open a file manager to some dir depending on your current theme. In my case (um24), it opened /usr/share/icons/Yaru/scalable/status/
I select an icon (most are svg files) and the launcher icon changes as well as the top panel icon changes.
I have my own icons I have made.
/home/andy/Icons/
I have no problems using other icons in that directory.
your theme does not 'see' the icons in /home/andy/icons/ so you could move your icons to the theme dir (sudo mv /home/andy/icons/scripts_icon.png <theme_dir>
)
I can confirm that this action, of clicking on the icon to update it with a new choice, is also available in UM 22.04 .

Go where you normally would to open Thunar from the Brisk Menu but instead click-hold then drag-&-drop that menu selection onto the App Panel.
Presto!
It is now available for handy access.

I am trying to extract 2 directories into Gimp's theme directory.
That directory does not show up ?
Can I extract those via cli?
I am getting a tad bit frustrated. Ok, a lot frustrated.
I use my own icons alot. Put your icons in a folder at /usr/share/icons/ (I named mine my icons).
Then open main menu (mozo) under sytem>prefereces> Look and Feel> Main Menu
Find the menu item you wish to change the icon like Thunar
Click on properties
Now click on the square with the current Icon in the upper left had corner.
Navigate to your icon folder (you many want to write down or save where the current icon is located if you ever need to restore it)
Click on the Icon you want, wait a bit it takes a second of two to change, I also click anywhere back in the properties box to make sure it resests.
Now delete any current icons on your desktop or panel, go to your menu ( I use classic and put YOUR icons on the desktop or panel. Now your icon will show.
