Not sure I understand your question.

Full list of packages can be found in the iso image casper/filesystem.manifest file. Better to just run the iso from USB or in a VM to checkout all the apps.

For customization I roughly follow LiveCDCustomization - Community Help Wiki

For building the image I use this script: Life/buildlife.sh at master · cyberorg/Life · GitHub
