Understanding Ubuntu Mate encrypted partitions

Hello, I have a laptop with Ubuntu Mate installed on one HDD with full disk encription and I was wondering if there's any documentation in order to understand the partitioning system that it creates, as it is different from the usual Ubuntu ones.

In ubuntu and flavours, FDE (Full Disk Encryption) is done with LUKS, encrypting all partitions on disk, including /boot . This is a more secure procedure than encrypt only your personal folder with Ecryptfs, option that was done before Bionic version (for example in Xenial). The problem is: what happens if you have windows dual boot in your disk? LUKS it's a little problem.
