How can I uninstall Libreoffice safely? Or, is it part of ubuntu-mate-desktop and can’t be uninstalled?

It’s probably part of the desktop meta-package, so I would advise to not un-install.
Do you need to uninstall? You could, alternatively, simply remove its menu entries and forget about it if you don’t want to use it.
I’ve un-installed Libre Office and replaced with Abiword and Gnumeric, as they are lighter and all I need.
I just used the terminal:
sudo apt-get remove (package name)
Package name being what you want to un-install, minus the brackets of course.
You could probably do it via Synaptic Package Manager also.
I have had no diverse effects in doing so, yet!
