If you want to install UbuntuMATE on a Samsung Galaxy A25 phone, the first big issue is whether you can do what is called "rooting" the device, namely being able to get access to all of the installed OS with root-level access.
If you can achieve that successfully, then its a matter of verifying whether there is such a thing as trying a "Live UM" on the phone, before installing something like VMware to run UM.
Or you can research to determine if your phone is compatible with UbuntuTOUCH.
After all, it is my understanding that UbuntuMATE is intended as a Desktop environment, not specifically designed for a telephone, although many components are "mobile-ready".
Also wondering, given your situation, whether
you are considering using the phone as only a network access-point gateway for your computer, or
you are looking to limit all your Linux usage to the A25's GUI?

Rooting a phone can result in a non-functional fone. I.E. an expensive paper weight.
This is pretty handy device. It can charge my phone, and anything up to 400 watts.
So it will run many 120 volt A.C. devices
Like my shaver and charging my shaver.

I didn't know what your level of knowledge on that was. I was putting that out there as something that many have pursued and found to be beneficial. But of course, one must always research to ensure that such approaches fit one's own hardware/software context.
Have you looked for any Linux emulator Apps in the Google Android store? I haven't had a device for at least 3 years, so haven't checked myself.
This might be possible; but Ubuntu MATE is a desktop operating system, and so the chances of it being clean and functional on a phone are (practically) zero.
Ubuntu Touch, Mobian, postmarketOS, all look like more promising options as operating systems.
I believe it will be possible. Assuming we're talking of keeping the phone's OS (Android) and using an application to enable access to a local Linux instance running on the device. At minimum, it will have terminal output, but it supports a display too.
It's called AnLinux and needs the Termux app. I tried playing with it before, but I can't remember much. It doesn't require root since it uses PRoot, which allows isolated containers/chroots without needing root's permission.
You'll probably need plenty of storage space and a good internet connection.
On my very old rooted phone, I once had a Linux running in the background, and could use X2GO to remotely connect (SSH) into it from the desktop with the MATE environment.
Handy yes but power inverters really only work if the vehicle is running and a running vehicle uses gas and in a stationary vehicle that's not the safest thing to do,CO is kinda deadly.

If you're using a power inverter and the engine isn't running you'll drain your battery and then oops no starting for you without a jump.And CO is definitely deadly.
