Well, the visible difference is use of desktop environments. Ubuntu Vanilla is using Unity Shell, while Ubuntu MATE is using MATE desktop as name indicates.

Also, Ubuntu Vanilla LTS will be supported for 5 years. Ubuntu MATE LTS, as any other official derivative of Ubuntu will be supported for 3 years.

Ubuntu MATE has all the snappy tools built-in, just like Ubuntu.
